M'Khamsa
M’Khamsa or the hand of Fatima is a symbol used all over the Middle East and North Africa for healing and protection. Traditionally, it was used to ward off the evil eye. Recently it has become a universal symbol of protection, wholesomeness and healing. Mustapha believes the M’Khamsa, is the perfect metaphor for what Avicenna preached. What distinguishes Mustaphas Harissa and sets it apart from the rest? The challenges in
making hot sauce are making it shelf stable and affordable without using the stems and the seeds. When you use fresh peppers, most of the weight of the peppers is the stems, seeds, and water content. Peppers are very expensive, and if you remove the stems, the seeds, and the water from the peppers and make the hot sauce just with the pulp of the pepper, the cost of the hot sauce would be prohibitive. That is why most hot sauce companies try to overcome these obstacles by grinding all the peppers' stems, seeds, and meat and keeping the sauce homogenous by using Xanthan Gum as a binder. And since most of the sauce is water, the water content would keep it from being shelf stable. They use chemical preservatives to stabilize the hot sauce and make it shelf-stable. Some use purees or rehydrated pepper powders and tomato paste; when the first ingredient is water or vinegar, that’s a sign that the powder was rehydrated. When you look at a recipe and find that the first ingredient is real peppers and there are no binders or chemical preservatives, then you look at the price, which is prohibitive.
