Ingredients:
Left over pulled pork
1 Red radish sliced into strips
1 Ramp onion sliced
2 Thin slices of red onions
Some cilantro leaves
Put a couple of ladels full of the leftover pulled pork in a sauté pan. Brown the pork creating a crust. In a different sauté pan, warm up the corn tortilla giving it some char. Assemble the Carnita by putting the pork on the corn tortilla, pile on the onions, the ramps, the radish and the cilantro. You can always add more Harissa.
