Harissa is a cross between hot sauce and ketchup. In North Africa and the Middle east it is used as a hot sauce, condiment, marinade and a flavor enhancer.
In Tunisia, Harissa is made with dried peppers that are hydrated with oil. In Morocco Harissa is made from fresh peppers that are cured. Mustaphas Harissa honors the integrity of the recipe that has been passed down from generation to generation.
I love hot sauces, especially Israeli Zchug, but I don’t like Harissa since it has a little sweetness to it from the sweet red peppers

However, looking for Schug here on Amazon, my eye caught a picture of this vibrant red Moroccan Harissa so I’ve decided to order one and I LOVE IT!!!
“Moroccan and Tunisian Harissa is similar to Schug since it is made with a combination of chilis, cumin, coriander, garlic, and olive oil. Unlike Schug; however, harissa uses dried red chilis to make chili paste, and caraway is often added to deepen the flavor.“
