Harissa Marinade

Susan Spicer of Mondo in New Orleans uses this recipe to marinate pork shoulder.


1 cup soy sauce

½ cup brown sugar

½ cup orange juice

1 tbsp Mustapha's Harissa

1 tbsp pomegranate molasses

2 star anise pods

1 1-inch piece ginger, thinly sliced

4 cloves garlic, thinly sliced

⅓ cup chopped cilantro stems



Combine soy sauce, brown sugar, orange juice, Harissa, pomegranate molasses, star anise pods, ginger, garlic cloves, and chopped cilantro stems.
