Chicken Tagine with Spring Vegetables

This is one of my favorite spring dishes either with chicken when the sweet peas and artichokes are in season.  It can be made with chicken, beef or lamb.  I used game hen for this dish.


1 game Hen

½ an onion red or yellow grated or chopped finely

2 garlic cloves chopped

1 tablespoon of parley chopped

½ teaspoon of turmeric

½ teaspoon of ginger

1 teaspoon of tomato paste

1 cup chopped tomatoes

2 tablespoons of olive oil

1 cup of white wine or water

1 teaspoon of Mustaphas Harissa

1 teaspoon of chicken flavor soup base mix

1 large artichoke peeled (retain just the heart of the artichoke)

2 medium size carrots peeled and cut into 1-inch cubes

1 cup of sweet peas preferably fresh ones, frozen ones will do


Toss the onions in a medium pot with olive oil and let cook on medium heat.  When the onions are translucent add the garlic and all the spices, the tomato paste and the game Hen.  Let cook for a few minutes then add the tomatoes, the parsley and cilantro.  Add a little half a cup of water or white wine.
