Mustapha’s Avocado and Harissa Toast

This Avocado and Harissa toast is a recipe that a few people sent me.  Some only avocados on toasted bread with Harissa.  They were so proud of their creation that they sent me photos.  I decided to make it myself and see the outcome.

I started by buying half a loaf of Columbia City’s Campagne Sourdough.  It is a mild, rustic sourdough made with white, whole wheat, and rye flours. This dough goes through a 22-hour fermentation process, which breaks down the sugars and proteins into easily digestible forms.   I used only one slice because it is large enough. 


One slice of bread

½ an avocado

4 cherry tomatoes

Some crumbled goats cheese

2 tablespoons of Mustapha’s Harissa


I cubed the avocadoes and spread them on the bread.  I added the tomatoes and the goat cheese and then the harissa and seasoned with salt and pepper.

It was very simple, quick and delicious.  The earthiness of the bread, married very well with the tanginess of the goat cheese, the sweetness of the cherry tomatoes wrapped up in the creaminess of the avocado was extremely delicious.
